Punjabi Yakhni Pulao is a dish made out of rice cooked in a seasoned yakhni (broth). Yakhni first originated in Persia and was brought to India by royal Persian chefs sometimes during Akbar’s rule. The initial documented recipe of Yakhni Pulao is found in Ain-I-Akbar. Usually the broth is made from mutton but chicken and beef can also be used without any problem. In some cases, the rice attains its brown or golden texture by first being lightly browned in oil previous to the toting up of broth. Browned onions and other vegetables as well as a healthy mix of spices is then added. Depending on the local tastes, the serving can also have vegetables, and dried fruits.
