Ingredients
- 200g Unripe Mango (1/4 cutting)
- 100g Carrot (Julian cutting)
- 100g Lemon
- 8 Green Chili
- 100g Cucumber (slice cutting)
- 100g Cauliflower
- 6 cloves Garlic
- As per taste Salt
- 1 tbsp Red Chili Powder
- 1 tsp Turmeric
- 1 tbsp Mustard Seeds
- 1 tbsp Fennel
- 1 tbsp Fenugreek Seeds
- 1 tsp Kalonji
- 1 cup Mustard Oil
Cooking Method:
1- In a bowl, add unripe mango, carrot, lemon pieces, green chili, cucumber, cauliflower, salt, red chili powder, turmeric and mix it well.
2- Now, in a pan, add mustard seeds, fennel, fenugreek seeds, kalonji and roast for a while.
3- Now, add mustard oil and cook for 2-3 minutes. After that, mixed vegetables and mix it.
4- Now, keep aside achar for 2-3 days

گاجر(جولین کٹنگ) ایک سو گرام
لیموں ایک سو گرام
سبز مرچ آٹھ عدد
کھیرا(سلائس کٹنگ) ایک سو گرام
پھول گوبھی ایک سو گرام
ثابت لہسن چھ جوئے
نمک حسبِ ذائقہ
لال مرچ پاؤڈر ایک کھانے کا چمچ
ہلدی ایک چائے کا چمچ
سرسوں کے دانے ایک کھانے کا چمچ
سونف ایک کھانے کا چمچ
میتھی کے دانے ایک کھانے کا چمچ
کلونجی ایک چائے کا چمچ
سرسوں کا تیل ایک کپ
ترکیب
ایک باؤل میں کچے آم لیں اور اس میں گاجر ،کٹے ہوئے لیموں ،سبز مرچ ،کھیرا ،پھُول گوبھی ،نمک ،لال مرچ پاؤڈر اورہلدی ڈال کر اچھی طرح مکس کر لیں۔
۔اب ایک پین میں سرسوں کے دانے لیں اور اس میں سونف ،میتھی کے دانے ،کلونجی ڈال کر ہلکا سا بھون لیں ۔
۔اب اس میں سرسوں کا تیل ڈال کر دو سے تین منٹ پکا ئیں اور تیار کی ہوئی سبزیاں ڈال کر مکس کر لیں ۔
۔اب تیار کیے ہوئے اچار کو دو سے تین دن کے لیے رکھ دیں ۔
