Paye, also known as trotters are a traditional Pakistnai dish which is served as many festive occasions and served to guests at special gatherings like Eid Milan parties and bbq evenings. Paya is an Urdu or Hindi word for feet. There is a whole range of mutton recipes to choose from on the sooperchef menu like Mutton Mandi, mutton roast masala, Punjabi Mutton curry masala, and mutton do pyaza. The paya curry is an amalgamation of central and south Asian Cuisine, and in central Asian territories, it is known as “Pacha”. In the early days, the Paya dish was adopted by Muslim chefs from places like Lucknow, Lahore, and Hyderabad from where it gained popularity and now is a famous Pakistani recipe, playing a significant role in Pakistani and Indian cuisine. It is also eaten in Bangladesh, Saudi Arabia, and the Middle East, however, the cooking style varies from place to place. It has become of the most loved traditional breakfasts in Pakistani especially the Punjabi dominated cities like Lahore and in Amritsar, India. It is garnished with long coriander, fried onion, ginger and lemon juice. It is mostly eaten with a hot naan or roti and in some cases, a chapati is preferred. Ingredients

- 8 Mutton Paya

- 4 tbsp ginger garlic paste

- Salt as per taste

- 10 g whole garam masala

- ½ cup cooking oil

- 1 onion

- 1 tsp cumin

- 1-1/2 tsp red chili powder

- 1 tsp turmeric

- 1 tsp garam masala powder

- 1 cup yogurt

- 10 g green coriander

- 4 green chili

- 10 g ginger

- 1 cup Paya stock

Method

1- In a cooking pot, add water, mutton paya, ginger garlic paste 2 tbsp, salt, turmeric ½ tsp,garam masala and cook for 2-3 hours on low flame.

2- In another cooking pot, add cooking oil, onion, whole cumin, ginger garlic paste 2 tbsp, boiled mutton paya, red chili powder, turmeric, garam masala powder, green coriander green chili ginger, and cook for 8-10 minutes.

3- Now add, paya stock and cook on low flame.

Your tasty Mutton paya now ready to serve.

پیا ز ایک عدد
ثابت زیرہ ایک چائے کاچمچ
لال مرچ پسی ہوئی ڈیڑھ کھانے کے چمچ
ہلدی ایک چائے کا چمچ
گرم مصالحہ پاؤڈر ایک چائے کاچمچ
دہی ایک کپ
سبز دھنیا دس گرام
سبز مرچ چار عدد
ادرک دس گرام
پایا یخنی ایک کپ

ترکیب
۔ایک پین میں پانی لیں اور اس میں مٹن پائے ،ادرک لہسن پیسٹ(دو کھانے کے چمچ) ،نمک،ہلدی(آدھا چائے کا چمچ) ،ثابت گرم مصالحہ ڈال کر دو سے تین گھنٹے تک ہلکی آنچ پر اُبال لیں ۔
۔اب ایک پین میں کھانے کا تیل لیں اور اس میں پیاز ،ثابت زیرہ ،ادرک لہسن پیسٹ (دو کھانے کے چمچ)،اُبلے ہوئے پائے لال مرچ پسی ہوئی ،ہلدی (آدھا چائے کا چمچ) ،پسا ہوا گرم مصالحہ ،دہی ،سبز دھنیا ،سبز مرچ اور ادرک ڈال کر آٹھ سے دس منٹ تک بھونائی کر لیں ۔
۔اب اس میں پائے کی یخنی ڈال کر ہلکی آنچ پر پکا لیں ۔
