Paye, also known as trotters are a traditional Pakistnai dish which is served as many festive occasions and served to guests at special gatherings like Eid Milan parties and bbq evenings. Paya is an Urdu or Hindi word for feet. There is a whole range of mutton recipes to choose from on the sooperchef menu like Mutton Mandi, mutton roast masala, Punjabi Mutton curry masala, and mutton do pyaza. The paya curry is an amalgamation of central and south Asian Cuisine, and in central Asian territories, it is known as “Pacha”. In the early days, the Paya dish was adopted by Muslim chefs from places like Lucknow, Lahore, and Hyderabad from where it gained popularity and now is a famous Pakistani recipe, playing a significant role in Pakistani and Indian cuisine. It is also eaten in Bangladesh, Saudi Arabia, and the Middle East, however, the cooking style varies from place to place. It has become of the most loved traditional breakfasts in Pakistani especially the Punjabi dominated cities like Lahore and in Amritsar, India. It is garnished with long coriander, fried onion, ginger and lemon juice. It is mostly eaten with a hot naan or roti and in some cases, a chapati is preferred. Ingredients for Mutton Paya

  • Mutton Paya 8 pieces
  • Cooking Oil 1 cup
  • Onion 3pcs
  • Whole Cumin 1 tbsp
  • Ginger & Garlic Paste 3 tbsp
  • Salt as required
  • Red chili Powder 1 ½ tbsp
  • Turmeric 1 tsp
  • Coriander Crushed 1 ½ tbsp
  • Hot Spices 1 tsp
  • Cumin Crushed 1 ½ tbsp
  • Yogurt 1 cup
  • Hot water 2 liter
Cooking Direction
1- In a cooking pot, add cooking oil, cumin, onion and fry until light brown.
2- Now add ginger & garlic paste, Mutton Paya, salt, red chili powder, turmeric, coriander powder, hot spices, cumin powder, yogurt cook for 5-7 minutes.
3- Now add water and steam it for 35-40 minutes on low flame.
Your tasty Mutton Paya is ready to serve.

  • گرم مصالحہ ایک چائے کا چمچ
  • زیرہ کُٹا ہوا ڈیڑھ کھانے کے چمچ
  • دہی ایک کپ
  • گرم پانی دو لیٹر

ترکیب

ایک برتن میں آئل لیں اس میں پیاز اور ثابت زیرہ ڈال کر لائیٹ براؤن ہونے تک بھون لیں ۔اب اس میں ادرک لہسن کا پیسٹ،پائے ،نمک، پسی ہوئی لال مرچ ،ہلدی پاؤڈر ،دھنیا پاؤڈر ،گرم مصالحہ ،زیرہ پاؤڈر اور دہی ڈال کر پانچ سے سات مِنٹ تک بھونائی کر لیں ۔اب اس میں گرم پانی ڈال کر دو سے تین گھنٹے کے لیے درمیانی آنچ پر رکھ دیں اور درمیان میں دیکھتے رہیں اور پک جانے پر اُتار لیں ۔
